Meal Plan…Tuesday

Brooke’s Meal Plan

A day late and not too exciting but after Mark’s birthday party this weekend I don’t need to do much planning of meals with all the leftovers we have. 

Monday: Leftover Carne Asada Tacos

Tuesday: Leftover Enchilada Casserole (I added diced tomatoes, corn, and taco seasoning and cut up the tortillas as suggested.  I did not use tempeh)

Wednesday: Happy Birthday, Mark!  Hmm, what will we eat at Disneyland?

Thursday: Burritos

Friday & Saturday:  Dinner at my parents’

 Extras: I will be steaming and pureeing our pumpkins to make Pumpkin Gingerbread and baking Chocolate Chocolate Chip Cookies at some point this week.

Monday: Spinach, Chicken, and Feta Salad

Tuesday: Leftover Taco Soup (See last week for the recipe)

Wednesday: Sweet and Sour Chicken

Thursday: Dinner with Friends

Friday: Chicken Tacos

Menu Plan Monday

MPM

Thanks to Menu Plan Monday for helping me save time and money every week for meals!  Here is my list of meals planned this week:

Monday: Caramelized Onion Chicken with green beans (I used pureed blueberries instead of the raspberry jam)

Tuesday: Leftover Soup

Wednesday: Breakfast Scramble (use up the left over veggies from this weekend)

Thursday: Taco Soup (see recipe below)

Friday: Mushroom-Herb Chicken with mashed yams

Saturday: Dinner with Friends

Taco Soup

This is a great quick and easy meal to make.  I have seen many different varieties of this meal, which makes it great for everyone.  I put out the toppings and let everyone choose.  Here is how I make this meal:

Cook 1 lb Ground Turkey or Ground Beef

Combine in one pot:

Cooked Meat

2 cans of beans (your choice) I use kidney beans and pinto beans

1 can of corn

1 16 oz jar of salsa (your choice) or you can season the meat with taco seasoning if you prefer

Toppings:

Cheese

Green Onions

Sour Cream

Avocado

Black Olives

Anything else you might have on hand

 Additional idea: serve over Fritos/chips for an additional crunch.

Menu Plan Monday

Martinez Menu

We are currently trying to eat solely out of our freezer and pantry for the next few weeks. Of course we will be breaking that rule for milk, some fresh veggies and Mark’s birthday party

Monday: Savory Crescent Chicken Squares and veggies

Tuesday: Lentil Soup and No Time Bread

Wednesday: Chicken Garlic Pizza, our favorite dough is currently Trader Joe’s, I would love some suggestions for dough I can make at home and freeze

Thursday: Lime cilantro chicken & baked potatoes with all the fixins

Friday: Grilled cheese sandwiches and tomato soup

Saturday: Happy Birthday to Mark! Carne asada tacos, cheese enchiladas, Hershey’s Perfectly Chocolate Better Than Sex Cake or Claim Jumper Motherlode Cake

Sunday: Dinner with friends

Monday – Spaghetti Squash with Turkey Meatballs and pasta sauce

Wednesday – Butternut Squash and Shallot Soup with grilled cheese sandwich

Friday – Sauteed Chicken with Zucchini Ribbons
