Menu Plan Monday

Thanks to Menu Plan Monday for helping me save time and money every week for meals!  Here is my list of meals planned this week:

Monday: Caramelized Onion Chicken with green beans (I used pureed blueberries instead of the raspberry jam)

Tuesday: Leftover Soup

Wednesday: Breakfast Scramble (use up the left over veggies from this weekend)

Thursday: Taco Soup (see recipe below)

Friday: Mushroom-Herb Chicken with mashed yams

Saturday: Dinner with Friends

Taco Soup

This is a great quick and easy meal to make.  I have seen many different varieties of this meal, which makes it great for everyone.  I put out the toppings and let everyone choose.  Here is how I make this meal:

Cook 1 lb Ground Turkey or Ground Beef

Combine in one pot:

Cooked Meat

2 cans of beans (your choice) I use kidney beans and pinto beans

1 can of corn

1 16 oz jar of salsa (your choice) or you can season the meat with taco seasoning if you prefer

Toppings:

Cheese

Green Onions

Sour Cream

Avocado

Black Olives

Anything else you might have on hand

 Additional idea: serve over Fritos/chips for an additional crunch.
